Ingredients:

  • 2 racks of baby back ribs
  • 1 cup Dragon's Smoke ghost pepper hot sauce
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt

Instructions:

  1. Prepare the ribs:

    • Start by removing the membrane from the back of the ribs. Use a sharp knife to loosen one corner, then grab the membrane with a paper towel and peel it off.
    • Rinse the ribs under cold water and pat them dry with a paper towel.
  2. Prepare the marinade:

    • In a large bowl, whisk together Dragon's Smoke ghost pepper hot sauce, soy sauce, honey, apple cider vinegar, Worcestershire sauce, minced garlic, smoked paprika, onion powder, black pepper, and salt. This will create a spicy and flavorful marinade.
  3. Marinate the ribs:

    • Place the ribs in a large resealable plastic bag or a shallow dish.
    • Pour the marinade over the ribs, making sure they are evenly coated. Massage the marinade into the meat, ensuring all surfaces are covered.
    • Seal the bag or cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to infuse.
  4. Prepare the grill:

    • Preheat your grill to medium heat, around 275-300°F (135-150°C). If using a charcoal grill, set up a two-zone fire by arranging the coals on one side of the grill for indirect cooking.

    • Place the ribs on the grill, bone side down, over indirect heat.

  6. Baste with marinade:
